with red bell peppers, onion & yellow rice
4-6 chicken thighs
1 red bell pepper, sliced
1 sweet onion, sliced
1 tablespoon paprika
1 tablespoon minced garlic
S & P to taste
1 package yellow rice
Season chicken with paprika and S & P.
Saute for about 10 minutes on each side. Take chicken out, pour out grease from the pan. Then saute the bell pepper and onion until lightly browned. Add in the garlic but just let cook gently for a couple of minutes. Add the chicken back to the pan. Cook the rice according to package. Serve the chicken over the rice & veggies.
Note: If you don't have red bell, you can use sweet peppers or even from the jar!
