Chicken enchiladas with green sauce

These are so amazing. They take some time to make, but they are well worth it. I started making these many years ago & have changed the recipe over the years. Like with most things I eat, I top it with Valentino sauce. They are also great with cilantro & sour cream.

The sauce is so good, and with lots of spinach they have good nutritional value. Poblano peppers are usually pretty mild, but sometimes I get a spicy one & it kicks the sauce up, which I love. I have also put a roasted jalapeno in the sauce, so if you like some spice, try that.
