Taco Tuesday has gone to Meatloaf Taco Tuesday

My Mom was a great cook, I think a big reason I love to cook so much is because of her. She was the type of Mom who made a well-rounded meal every night, usually with a dessert. She didn't make a huge range of food but for the most part, everything she made was good. Except meatloaf.

When I got older & got married, sometimes I would think, maybe we should have meatloaf. But I have memories of a dry, flavorless meat loaf covered in tomato sauce.

I did eventually get to where I can make a nice meatloaf. And it is one of those very

home-y, comforting meals with mashed potatoes and green beans.

But being that we have Mexican inspired food in my house a LOT, I saw a recipe one time for Mexican meatloaf. Like all recipes I loosely followed it. I have changed it to our tastes, and sometimes when I say it is taco night, the kids or husband request taco meatloaf. It's really great! I bet you could even try it with ground chicken or turkey.

Try it out, you will love it!

Taco Meatloaf


1 & 1/2 pound ground meat 

1/4 cup taco sauce (Ortega, in a jar)

1 tablespoon chili powder

2 teaspoons paprika

1 teaspoon cumin

1 teaspoon minced garlic

1 egg

Mix all ingredients together.  If you don't have the taco sauce, you can use salsa.  Pour into a standard bread pan.  Let cook 45 minutes on 350.  At about 35 minutes, take out & drain most of the fat, but not all or it won't be as moist.  

Let sit for about 10 minutes, then slice.  Put on either hard or soft taco shells, or both!  Put a soft flour tortilla around a hard taco shell with a little refried beans in between as 'glue'. Add sour cream, lettuce, tomato and serve with Mexican style rice.
